Tim Michaels has always dreamed of having a bakery to call his own. Old Mimosa Bakery and Sandwich is the product of his passion, imagination and determination.
Tim had a food truck that was destroyed a couple of years ago in a very unfortunate vehicle accident. He had plans to build a new truck and would need a proper kitchen to have as his base. This was the original inspiration and reason for him to take on the building of a kitchen.
Eventually Tim heard about a spot in the Fiddler's Run shopping center. He was able to check it out and could easily envision what he could do with the empty space. It would take some work, but Tim is no stranger to working hard.
Along the way, the idea of using the space for more than just a commissary kitchen evolved into: Old Mimosa Bakery and Sandwich. Tim Michaels brought Catie Jackson on board and they decided to combine their skills to bring this new bakery to life. Together their high standards would guarantee high quality products made with high quality equipment.
Tim and Catie will provide good food and fresh brewed coffee to the people around Morganton and Fiddler's Run. Coffee to get their busy days started; and handmade buttery, flaky pastries or a warm and filling breakfast sandwich that will have them coming back for more!
Unfortunately, there have been many delays in the process of building and getting the necessary permits for the bakery. As we all have experienced recently- shipping, as well as supply chain delays have created many problems for businesses that are already open. Also the problem of being understaffed has effected the speed in which any permit offices are able to get around to inspecting any new restaurant. Opening a new bakery right now isn't a cake walk. But when Old Mimosa Bakery and Sandwich opens, it will be the answer to many an individuals' question of "Where should I go for breakfast?"
